Marion Nestle is Paulette Goddard Professor of nutrition, food studies, and public health, emerita, at New York University, and Visiting Professor of nutritional sciences at Cornell. She has a PhD in molecular biology and an MPH in public health nutrition from UC Berkeley. She lives in New York City.

It can be difficult to differentiate between scientific research and marketing research when it comes to information on the food that we eat. Nutritionist Nestle, of no relation to the food company of the same name, goes into great detail about how corporate interests influence nutrition science, especially as reported to consumers. I would recommend nutritionists, journalists, and those with an interest in research science to read the whole book in detail. The average consumer would probably get too bogged down in the detail of this book but can take away the following main points:• Always look for who funded any research about food. If not mentioned, ask.• Pay attention to wording. “Might†means just as likely to be “might notâ€.• If it sounds good to be true, it probably is (especially if it highlights one specific food; there are no superfoods)• Best nutritional advice: eat a wide variety of relatively unprocessed foods in reasonable amountsAfter reading this book, I will be more skeptical about the food and other types of research I hear about. For instance, I never considered that corporate interests would fund other causes of a problem that do not involve their product. For instance, big sugar gives money to research on plaque and tooth care to move focus from the effects of sugar on teeth while soda companies fund research on how physical activity is more important for avoiding obesity than food choices. Without a big pool of funds for unbiased research, we don’t have an avenue for pure scientific research. With everyone urging us to do all that we can to get healthier and with so many books available to those want to figure out how to do that, which books, magazine articles, blog posts, Tweets, Facebook posts, newspaper articles do you believe? They all say something different.In “Unsavory Truth,†Marion Nestle unveils why there are so many people espousing that their way is the only way to lose weight, increase the health of your heart, reduce your A1C, cheat death, etc. It seems that the doctors and scientists making most, if not all, these claims are being funded by the very companies who stand to make the most money from these studies, i.e., Hershey’s, Coca-Cola, etc.Nestle (no connection with the company of the same name) says it’s time to put the public’s health before corporate profits. Easier said than done, of course.If you are interested in stopping the food industry from continuing to manipulate nutrition science, this is the book for you. It is written for the non-scientist so we can all understand what’s going on in the world of nutrition.
First part destroy nutrition myths, based on investigations supported by food industries. Unfortunately, the second part, regarding interests conflicts in research, turns a bit technical. Anyway, as Miss Marion used to be, this book create consciousness about what we eat.
After reading the review of this book in the NY Post (kudos for getting that coverage) I am compelled to offer some balance. Ms. Nestle alleges corrupt scientific practices by the food industry. Yet there is nothing pure about the agenda-driven "science" being manufactured by nanny-staters such as Ms. Nestle. They are weak, methodologically flawed and built to arrive at a preconceived conclusion in order to push legislation and higher taxes on foods and drinks "for your own good." It's agonizing to read the accusations Ms. Nestle hurls with such indignance when the same can be said about those coming after our food and drink. (Disclaimer: I do not work for the food industry in any capacity or receive any benefit from that industry. I am a champion of principle applied consistently across the board: the right to be left alone to make an informed decision.)
Especially if you work in the food and beverage industry.
Nestle (no relation to Nestle’ the brand) is an expert in her field. But warning this book is next level-technical especially in the last chapters.
Nothing new here. "Who funded the study?" is all you need to know. Duh.
